DESCRIPTION:Carrot tops\, lemon peels and apple cores are just a few examples of typically tossed aside foods that are full of flavor and can still be eaten! Learn how to use food scraps to get the most out of your produce and help to divert food waste away from landfills and onto your plate. Join this free cooking class at the Hub on the Hill\, registration is required.  \nYou must pre-register for this event by August 29 to reserve your space by emailing info@thehubonthehill.org. Please note that registration is now FULL for this event. \nThis event is part of the 2022 Open Farm Weekend\, which runs from September 2-5 and features farms and small businesses along the Boquet Valley Cuisine Trail. The Essex County Soil and Water Conservation District will be offering resources for landowners and farmers\, as well as demonstrations on how they use drone technology in their work to preserve water quality. Additionally\, the Essex Farm Institute team will be there with information on how you can advocate for a sustainable local food system in the Adirondacks! Including information on their micro-grant program and the recently passed Climate Resilience and Soil Health Act. \nThe Hub on the Hill “works with the farmers and small food businesses of the Adirondack-North Country region to transform the region’s bounty of fresh produce into value-added shelf-stable and frozen products. Our desire to support our local agricultural economy and community\, drives our efforts to coordinate the processing of fresh produce into high quality value-added products. Visit our self-serve market open seven days a week!” \nThe mission of the Adirondack Land Trust is to forever conserve the forests\, farmlands\, waters and wild places that advance the quality of life of our communities and the ecological integrity of the Adirondacks. We use conservation easements and other conservation tools to help farmers plan for their lands and take steps that can provide operating capital as well as strengthen water quality protections while keeping land in farming. \nThe mission of the Essex Farm Institute (EFI) is to advocate for\, support\, and promote resilient\, diversified farms that strengthen the health of natural and human communities in the Adirondacks. \nEssex County Soil and Water Conservation District was formed in 1965. Soil and Water Conservation Districts are special purpose districts\, authorized under NYS law and created to develop and carry out programs of soil\, water and related natural resource conservation by providing technical assistance and programs to residents\, land owners and units of government. Our office is located in the basement of the Essex County Department of Public Works in Elizabethtown\, NY. \n
