SUMMARY:Plan or Improve Your Food Business Series
DESCRIPTION:Registration is open for the Plan or Improve Your Food Business 4-part series that kicks off February 13th. This includes a session dedicated to getting recipes approved (who\, when\, where\, how) which is a popular topic. Once registered\, folks can attend one or more of the 4 online sessions. There’s also an optional in-person meal and tour at the close of the series. \nEach webinar focuses on a particular facet of managing a food business. While it’s impossible to cover every unique circumstance\, these sessions tackle the most common questions Extension fields from entrepreneurs considering value-added production. Sessions are held online 6:00-7:30 pm and each includes a presentation\, activity for the group\, plus resources to learn more after each session including recorded conversations with other small NYS food entrepreneurs. The course is led by M. Flip Filippi\, who is the Harvest Kitchen Manager and Local Foods Program Leader at Extension. Her focus is offering custom advice to entrepreneurs looking to create value-added products. Flip strives to create a welcoming learning environment while simplifying the multi-layered regulatory and financial planning aspects of food entrepreneurship. She has completed Food Safety Manager’s Training\, Better Process Control School for Acidified Products\, Holistic Financial Planning\, FSMA Regulations for Small Food Producers\, Produce Safety Alliance Grower Training\, and Master Food Preserver trainings. \nThe series kicks off on February 13 and finishes March 6. The topics for each session are:\n1. Understanding Food Business Types\n2. Estimating Costs of Starting a Food Business\n3. Recipe Approvals\, Record Keeping\, and Food Safety\n4. Creating Effective and Legal Product Labels.\n5. Plus\, all participants are invited to an in-person closing event at the Harvest Kitchen at the Extension Learning Farm in Canton on March 13th to enjoy a meal together\, connect with other food entrepreneurs\, and experience a mock kitchen inspection. \nAn entrepreneur who took part in last year’s program shared\, “The course was well-balanced in terms of presentation\, group discussion\, and shared resources for further work. I loved getting to meet the different producers and hear their plans. Having real life examples made all of the licensing requirements\, etc. make more sense. The class was an appropriate amount of time to get everyone going in the right direction. DESCRIPTION:“Pressure canning is an amazing technique to preserve low acid foods such as meat\, beans\, soups and vegetables than cannot be safely preserved with water bath canning. It is a popular method to preserve venison or “tough\,” cuts of meat. Join this class to demystify the process and see the steps in action from beginning to end. With the right tools and knowledge\, this method can be empowering\, not intimidating! \nThe instructors for this in-person class are Local Food Program Leader Flip Filippi and Master Food Preserver volunteers. The instructors will share both the scientific reasoning behind pressure canning as well as tips to make this preservation technique a useful skill in your preservation toolbox. The class will also cover the tools needed with a comparison of the various models of pressure canners. There will be time for questions throughout the session and class will get a chance to can two recipes (meat and non-meat). \nAll pre-registered participants will receive the recipes and 1 jar of product to take home. This class is made available on a sliding scale from $10-40. DESCRIPTION:“Cornell Cooperative Extension of St. Lawrence County is hosting a Story Slam as the final closing event of their exhibit In Season: Our Rural Food System in Photos displayed at The TAUNY Center in Canton on October 29th\, 2022 from 1pm-3pm. Enjoy walking and mingling with community members through the photo exhibit one last time with free refreshments. To participate\, you can share a 5-minute story about food and/or farming or just come\, grab some food\, and listen to the different stories. \nThe theme for the event is “Food and Farming”. All stories must be true\, from your experience\, relate to the event theme and told without any notes or props. People’s choice awards will be voted by audience members after stories are told. While this event is free and open to all\, pre-registration is required due to the limited space and time. There are limited storytelling spots available\, so Extension cannot guarantee there will be time for every story. If you are interested in registering as a storyteller\, the deadline is Wednesday\, October 26th. SUMMARY:Brewing Kombucha with Seasonal Flavors
DESCRIPTION:Summer’s heat pairs perfectly with a cold beverage. Now is a great time to learn how to brew a popular\, unique fermented drink at home! Kombucha is produced by fermenting sweet tea with a culture of yeast and bacteria. It can be found in grocery stores\, but produced more economically on a home scale. The session will include tips on how to use locally available ingredients including honey\, maple syrup\, berries and herbs.\nInstructor Alexandra Brown is the caretaker of River Road Farm and a passionate home-fermenter. She delights in brewing\, drinking and sharing kombucha\, especially when creating unique combinations with seasonally available goodies. The facilitator for this session is Flip Filippi\, Extension’s Local Food Program Leader in St. Lawrence County. The classes are part of Celebrating Local Food: A Culinary Series led by Cornell Cooperative Extension of St. Lawrence County.\nThe workshop is available on a sliding scale\, $0-30 so that participants pay what they can afford. The class will be filmed live and all questions are welcome. Pre-registration is required. Once registered\, all participants will be sent the hyperlink to join online. All registrants will receive the class recording along with a resource sheet to encourage future kitchen adventures.

DESCRIPTION:Cornell Cooperative Extension of St. Lawrence County is offering a live demo from the Harvest Kitchen on Tuesday\, November 3rd 1-3pm. The cost is a sliding scale from $0-30.  \n“Pressure canning is an amazing technique to preserve low acid foods such as meat\, beans\, soups and vegetables than cannot be safely preserved with water bath canning. It is a popular method to preserve venison or “tough\,” cuts of meat. Join this class to demystify the process and see the steps in action from beginning to end. With the right tools and knowledge\, this method can be empowering\, not intimidating! The instructor for this live demonstration is Local Food Program Leader and Master Food Preserver Flip Filippi who will film from the Harvest Kitchen at the Extension Learning Farm and share both the scientific reasoning behind pressure canning as well as tips to make this preservation technique a useful skill in your preservation toolbox. The class will also cover the tools needed with a comparison of the various models of pressure canners.
